Super Easy Peasy Super Bowl Brunswick Stew!


Okay, my teams aren't playing in the Super Bowl today.....I love my Falcons....the "Dirty Birds" did real good this year.....and I can't help it....I love the Saints!!! Fell in love with them when they played in the Super Bowl right after Hurricane Katrina! But, I do love me some FOOTBALL....

Soooooo, as I was sitting here this morning thinking about what I could cook to enjoy in my new little place for my 1 Super Bowl....I decided on Katy's Easy Brunswick Stew! Katy, being my Mother is the Best Cook ever, but as she has gotten older and alot of her time is taken up caring for my Daddy...she has learned and taught us new easy recipes...and one of my Favs is her Brunswick Stew....

All you need is from the meat section of the store, the little containers of the already prepared barbecue chicken and pork....use both if you like both in your Brunswick Stew. Today I used the barbecue pork.
Dump that in a big pot on stove....then take one can of corn and one can of lima beans....do not pour out juice from cans...dump that in also.....then take chicken broth and pour until over all this and stir...I added enough of the chicken broth to cover all the ingredients and turn on simmer.

I let this cook for hours on simmer and then turn up to low after about 3 hours.....of course you can make a large batch of this as we usually do, but for me....I made a small batch.....it is sooooo simple and so delicious that no one will know that you just through it together in a snap!

I have also made a small batch of homemade cornbread for myself which is sumptuous along with the stew...I dipped some up just so I could show ya'll what it looked like....I also added a small can of tomatoes....this is a recipe that you can make your own! Enjoy Katy's Easy Peasy Brunswick Stew.
